A fresh interpretation of ‘progressive dining’ wholly devoted to the taste of India.

Jay’s seasonal cuisine experiments with the taste and presentation of local products and the experiences from his many travels. Modern Indian cuisine is justly famous for its complexity, its rich array of aromas as well as its varied methods of preparation. Presentation is also a major focus.

Jay is internationally famous for his brilliant interpretations of Indian dishes and demonstrates the depth and complexity of this cuisine with great imagination and charm.

Seared scallops with coriander, ginger garlic broth, fried trumpet mushrooms and mango relish

Roti ravioli filled with lamb vindaloo on aubergine bartha and pomegranate raitha

Cashew baklava with ginger-cardamom ice cream, white chocolate pebbles and exotic fruits
