In Japan, the world’s most expensive beef is produced: Kobe beef – costing up to several hundred francs per kilogram. Wagyu are a breed of Japanese cattle that dating back several hundred years.
Since their export from Japan has been forbidden for years, this special meat is produced in Chile and Australia under strictly controlled procedures.
The meat from Wagyu cattle is highly prized for its intensive inter-muscular marbling, which results in a distribution of fat throughout the meat, rather than around it. This marbling is the crucial factor in its unforgettable taste and tenderness.
In spite of the intensive flavor, the saturated fat content of this beef is roughly half that of most types of „lean“ beef.
For this reason, Kobe beef should actually help in reducing cholesterol levels.
